Instructions
- 1
Put the sugar and water in a saucepan. Heat on the stovetop until the sugar completely dissolves.
- 2
Take the pan off the burner. Stir in the birch extract.
- 3
Stir in food coloring if you are making red birch beer.
- 4
Place the syrup in the refrigerator until it is completely cold.
- 5
Pour the cold syrup and cold carbonated water into a large pitcher. Stir gently to combine.
- 6
Pour over ice and serve right away.
Chef's tips
Make sure the syrup is completely cold before mixing so the drink stays fizzy. Use real birch extract instead of root beer extract for the proper wintergreen flavor.
Storage
Store the syrup refrigerated for up to 2 weeks; mix with soda water fresh as needed.
Reheating
Not applicable; served cold.
Common mistakes to avoid
- โขPouring in the carbonated water while the syrup is still warm, which makes the drink go flat
- โขUsing root beer extract instead of birch extract, which gives the drink the wrong flavor
