Instructions

    Cut a slit down one side of each chilli, keeping the stem attached. Scrape out seeds lightly if they are very hot.

    Mash boiled potatoes with fennel, amchur (mango powder), chilli powder, cumin powder, garam masala and salt.

    Fill each chilli generously with the potato mixture.

    Mix besan (gram flour), carom seeds, salt and water into a thick batter, like pakora (fritter) batter.

    Heat oil in a kadai (deep frying pan) until medium-hot.

    Dip each stuffed chilli into the batter to coat it fully.

    Deep-fry in batches over medium heat until crisp and golden, turning them occasionally.

    Drain on kitchen paper. Serve hot with green chutney and tamarind chutney.

Chef's tips

Use large, mild chillies bred for stuffing rather than thin hot ones. Fry on medium heat so the batter cooks through without burning before the filling heats.
