Missi Roti
A hearty spiced flatbread made from a mix of gram flour and whole wheat flour, flavoured with carom seeds, onion and chilli, roasted on a tava and finished with ghee.

Instructions

Mix the wheat flour and besan (gram flour) together in a bowl.

Add the chopped onion, carom seeds, chilli powder, green chilli, coriander, salt and 1 tbsp ghee (clarified butter).

Add water bit by bit and knead well into a smooth, firm dough.

Cover the dough with a damp cloth. Let it rest for 15 minutes.

Divide the dough into balls. Dust with flour and roll each ball into a medium-thick round.

Heat a tava (flat griddle) on medium heat. Cook the rolled roti and flip it when light spots appear.

Spread a little ghee on both sides. Press gently with a spatula and cook until golden-brown spots form.

Serve hot with a dollop of butter, kadhi (yoghurt curry) or pickle.
Chef's tips
Knead the dough well because besan makes it crumbly, and resting helps it roll out easily. Cook on medium heat so the besan cooks completely without burning.

Storage
Best eaten fresh; keeps soft for a few hours wrapped in a cloth.
Reheating
Reheat on a hot tava for a minute on each side.

- โขRolling the dough too thin, which makes it tear because of the besan.
- โขCooking on high heat, which burns the outside before the inside cooks through.
