Heat ghee (clarified butter) in a pot. Sizzle the cardamom and cinnamon in the hot fat until fragrant.

Add the ginger-garlic paste. Cook until the raw smell fades away.

Blend fried onions with cashews into a smooth paste. Add it to the pot and cook for a few minutes.

Add the chicken pieces. Brown them over medium-high heat until they change colour.

Lower the heat. Whisk in the yogurt a little at a time, stirring continuously.

Add the red chilli powder and salt. Cover and simmer until the chicken is tender, about 30 minutes.

Uncover the pot. Cook for a few more minutes until the gravy is thick enough to coat the back of a spoon.

Scatter fried onions and coriander over the top before serving.
Chef's tips
Take the pot off the heat before adding yogurt and whisk constantly so the sauce stays smooth without curdling. Marinating the chicken in yogurt for an hour beforehand deepens the flavour.
