Instructions
- 1
Simmer dried apples in water until soft. Mash with sugar and cinnamon, cook until thick, and let cool.
- 2
Mix flour and salt together. Work in the shortening until the mixture is crumbly.
- 3
Add cold water. Stir until a dough forms.
- 4
Roll the dough out thin. Cut it into 6-inch circles.
- 5
Put a spoonful of apple filling on each circle. Fold over and press the edges with a fork to seal.
- 6
Heat 1/2 inch of oil in a skillet over medium heat.
- 7
Fry the pies 2โ3 minutes per side until golden brown.
- 8
Drain the pies. Dust with sugar while they are still warm.
Chef's tips
Cook the apple filling until very little liquid remains so the pies do not leak while frying. Press the edges tightly with a fork to keep them from bursting open.
Storage
Store at room temperature up to 2 days.
Reheating
Warm in a 300ยฐF oven for 5โ8 minutes to re-crisp.
Common mistakes to avoid
- โขAdding too much filling, which causes the pies to burst open during frying.
- โขSetting the burner heat too high, which burns the crust before the filling heats through.
