Instructions

    Put jowar (sorghum) flour into a bowl. Add salt if you are using it.

    Pour in hot water slowly and stir with a spoon. When cool enough, knead into a soft, smooth dough.

    Divide the dough into equal balls. Cover them with a damp cloth and rest for 10 minutes.

    Dust a plastic sheet or banana leaf with rice flour. Flatten each ball into a thin round flatbread with your fingers.

    Heat an iron griddle over medium heat. Carefully lift the rotte and place it onto the hot griddle.

    Cook until tiny bubbles appear, then flip over. Press gently with a clean cloth until light brown spots form.

    Hold directly over an open flame for a few seconds if you like. Spread with ghee (clarified butter) and serve hot.

Chef's tips

Always use hot water and shape the dough while it is still warm. Flattening the dough with your fingers is much easier than using a rolling pin.

Storage

Best eaten fresh; jowar rotte hardens quickly once cool.

Reheating

Warm briefly on a hot tawa; does not reheat as well as wheat roti.

  • โ€ขLetting the dough cool down before shaping, which causes it to crack and break apart.

Serving suggestions

Serve hot with ghee, gongura pachadi (tangy sorrel chutney), or your favourite spicy curry.
