Instructions

Toast the black sesame seeds in a dry pan until fragrant. Grind them with a little water into a smooth paste.

Roast the dried fermented fish lightly over an open flame or in a dry pan until fragrant.

Heat mustard oil in a pot. Fry the garlic and green chillies briefly.

Add the cubed pumpkin or taro, turmeric, and salt. Stir-fry for 2โ3 minutes.

Pour in enough water to cover the vegetables. Bring it to a boil.

Gently simmer until the vegetable is nearly tender. Stir in the sesame paste.

Crumble in the roasted fermented fish. Simmer for another 5 minutes until the gravy thickens slightly.

Taste and adjust the salt. Serve hot with rice.

Toast the sesame seeds gently over low heat because they burn quickly and turn bitter. Fermented fish smells strong at first, but softens into the gravy.
