Instructions

Rub the fish pieces with salt and 1 tsp turmeric. Let them sit for 10 minutes.

Heat 2 tbsp mustard oil in a pot. Fry the fish pieces on both sides until just golden, then remove and set aside.

In the same oil, sizzle cumin seeds or panch phoron (five-spice mix) until fragrant.

Add chopped onion and fry until see-through. Stir in ginger-garlic paste and cook briefly.

Add chopped tomato and the remaining turmeric. Cook until the tomatoes soften.

Pour in 500 ml water and bring it to a boil. Season with salt.

Gently slide the fried fish pieces into the thin broth along with slit green chillies.

Simmer uncovered on low heat for 8-10 minutes until the fish is cooked through. Serve hot with rice.

Keep the curry deliberately thin and watery, which is characteristic of jhor (light broth) rather than a thick gravy. Handle the fish gently once added to avoid breaking the pieces.
