Instructions

    Dry-roast grated coconut, coriander seeds, dried red chillies and black pepper until fragrant and lightly browned. Cool and grind with a little water into a smooth paste.

    Heat oil in a kadai (deep curved pan). Fry chopped onions until golden.

    Add ginger-garlic paste. Cook for 1 minute until the raw smell goes away.

    Add the chicken pieces, turmeric and salt. Fry over high heat for 5 minutes.

    Stir in the ground coconut-spice paste. Cook for 4-5 minutes.

    Pour in water to make a medium gravy. Bring the liquid to a boil.

    Cover with a lid and simmer gently for 20-25 minutes until the chicken is cooked through.

    Stir in kachampuli (sour fruit vinegar) and curry leaves. Simmer uncovered for a final 5 minutes to thicken the gravy.

Toast the coconut and spices until truly golden-brown to build a deep flavour. Add the kachampuli near the end so its sharp tang stays bright.

Refrigerate for up to 2 days.
