Instructions

Grind the soaked dried red chillies with a little water into a rough paste.

Heat mustard oil in a wok (deep round pan). Add sliced onion and cook until soft.

Add crushed ginger and garlic. Fry gently until they smell fragrant.

Add the ground chilli paste and turmeric. Cook for 3โ4 minutes until the raw smell fades.

Add the pork cubes. Stir well until the meat is evenly coated with the spice paste.

Cook on medium-high heat, stirring often, until the pork browns and lets out its fat.

Lower the heat and cover with a lid. Cook for 20 minutes, adding a splash of water only if it sticks.

Take off the lid. Cook until the liquid dries up and the pork is tender.

Stir in salt to season and serve hot.
Chef's tips
Keep the dish dry rather than saucy by cooking without a lid near the end. Adjust the number of chillies to control heat, though wak pura is traditionally quite spicy.
