Instructions

    Mix bajra flour and salt. Slowly add warm water and knead quickly into a soft dough as it cools slightly.

    Divide the dough into balls. Pat each ball between wet palms or on a plastic sheet into a flatbread about 6mm thick.

    Carefully transfer to a hot tawa (flat griddle). Cook on medium heat until the base sets and light spots appear.

    Flip and cook the other side. Place directly over an open flame briefly until it puffs up and chars lightly.

    Spread ghee (clarified butter) over both sides.

    Serve hot with a generous slab of white butter on top.
