Instructions

  1. 1

Put the pork cubes, king chilli, ginger, garlic, mustard oil and salt into a bowl.

  2. 2

Mix everything well. Leave to marinate for at least 20 minutes, or overnight for deeper flavour.

  3. 3

Thread the marinated pork cubes onto the soaked bamboo skewers.

  4. 4

Sprinkle the crushed black sesame seeds over the skewers if using.

  5. 5

Heat your grill or open flame to medium-high heat.

  6. 6

Grill the skewers for 10โ€“12 minutes, turning occasionally. Cook until lightly charred and done throughout.

  7. 7

Let the skewers rest for 2 minutes before serving.

  8. 8

Serve hot, straight off the grill.

Chef's tips

Soak the bamboo skewers in water for at least 20 minutes so they do not burn on the grill.

Ingredient substitutions

  • pork shoulder โ†’ chicken thigh

Storage

Best eaten fresh off the grill; refrigerate leftovers for up to a day.

Reheating

Reheat briefly on a hot pan or grill to restore charred texture.

Common mistakes to avoid

  • โ€ขCutting the pork into uneven pieces, which causes some cubes to overcook while others stay raw.

Serving suggestions

Serve with a side of raw akhuni (fermented soya bean) chutney and rice beer, just like at festival stalls.
