Instructions

Mix the duck pieces with turmeric, salt and a little vinegar. Leave them to rest for 20 minutes.

Stir-fry grated coconut in a dry pan until dark brown. Grind it into a rough, coarse paste.

Heat coconut oil in a heavy pot. Fry sliced shallots until deep golden.

Add ginger-garlic paste and fry gently until the raw smell goes away.

Add chilli powder, coriander powder and black pepper powder. Fry briefly over low heat.

Add the marinated duck pieces. Brown the meat on medium-high heat for a few minutes.

Pour in a little water and cover the pot. Cook gently for about 45-50 minutes until the duck is tender.

Stir in the roasted coconut paste. Cook uncovered until the sauce turns thick and dark.

Scatter in curry leaves and simmer for 5 more minutes before serving.

Roast the coconut slowly to a dark brown without burning for a deep colour and flavour. Cook the duck slowly so it turns completely tender.
