Instructions

    Boil the potatoes until soft. Peel them and set them aside.

    Wrap the ngari (fermented fish) in a banana leaf or foil. Roast over a low flame until fragrant.

    Roast the green chillies directly over the flame until their skin blisters.

    Place the boiled potatoes in a large bowl. Mash them roughly with a spoon or pestle.

    Add the roasted ngari and chillies. Mash them into the potatoes.

    Mix in the chopped onion, boiled mustard leaves and banana flower if using.

    Season with salt. Mix everything by hand until well combined but still chunky.

    Garnish with chopped coriander. Serve at room temperature with steamed rice.

Roast the ngari well to remove excess rawness and deepen its aroma. Mash everything by hand for a traditional texture instead of blending it smooth.
