Instructions

Heat mustard oil in a small pan. Fry the chopped onion gently until soft.

Add minced garlic and green chillies. Cook briefly until they smell fragrant.

Add the hawaijar (fermented soya beans). Mash it lightly with a spoon as it warms through.

Cook for 2โ3 minutes while stirring. Stir until the mixture is well combined and aromatic.

Season with salt and remove the pan from the heat.

Move to a mortar (grinding bowl). Lightly pound it if you want a smoother texture.

Garnish with chopped coriander before serving.

Serve at room temperature as a side condiment.
