Instructions

Melt the jaggery (unrefined sugar) in warm water over low heat. Pour it through a sieve to strain.

Mix the rice flour, jaggery water, and a pinch of salt together. Stir until you get a thick batter.

Add the grated coconut. Stir it gently into the batter until well mixed.

Pass the banana leaf squares quickly over an open flame. This softens them so they bend easily.

Spoon some batter onto each leaf square. Fold the edges tightly to make neat parcels.

Place the folded parcels into a steamer basket.

Steam for 25โ30 minutes. The cakes should feel firm and fully cooked.

Allow the parcels to cool slightly. Unwrap them gently before serving.

Warming the banana leaves over a flame makes them bend easily without tearing. Do not overfill the parcels so the batter cooks evenly.
