Clean the fish thoroughly and pat it dry with a clean cloth or paper towel.

Rub the crushed ginger, garlic, chopped green chilli and salt all over the fish.

Leave it to rest for 15 minutes so the flavours soak in.

Pass the banana leaves quickly over an open flame to make them soft and bendy.

Place the marinated fish in the centre of a banana leaf and drizzle over the mustard oil.

Scatter the chopped coriander leaves over the fish.

Fold the leaf tightly around the fish to make a sealed parcel. Secure it with string or a bamboo skewer.

Steam the parcel for 20โ25 minutes until the fish is cooked through and tender.

Unwrap the parcel carefully to avoid hot steam. Serve hot with rice.
