Instructions
- 1
Put the puffed rice into a large mixing bowl.
- 2
Add the finely chopped onion, green chillies, and tomato if using.
- 3
Drizzle in the mustard oil. Toss well to coat all the puffed rice evenly.
- 4
Sprinkle in the salt and toss again.
- 5
Add the roasted peanuts if using for extra crunch.
- 6
Squeeze fresh lime juice over the mixture just before serving.
- 7
Toss once more. Serve immediately while the puffed rice is still crisp.
Chef's tips
Mix just before eating, as the puffed rice turns soggy if left standing with the oil and lime. Adjust the chillies for a milder or spicier snack.
Ingredient substitutions
- mustard oil โ any neutral oil, though flavour will be milder
Storage
Best eaten fresh; not suitable for storage once mixed.
Reheating
Not applicable.
Common mistakes to avoid
- โขMixing too far in advance, which makes the puffed rice lose its crunch.
