Instructions

Heat the mustard oil in a large pot. Fry the crushed garlic until it smells fragrant.

Add the harder vegetables like pumpkin and beans. Stir and cook for 3 minutes.

Sprinkle in the turmeric powder and mix well.

Add the bamboo shoot slices if you are using them. Add the slit green chillies.

Pour in the water and bring it to a boil. Lower the heat and simmer gently for 15 minutes.

Add the remaining softer vegetables like brinjal (aubergine) and keep simmering.

Gently add the cleaned dried fish. Simmer for another 10 minutes.

Season with salt. Add a little more water if needed and simmer briefly before serving.

Serve warm as part of the shared festival meal, traditionally on fresh banana leaves.
