Instructions

Grind the soaked urad dal with fennel, coriander seeds, asafoetida and chilli powder into a coarse paste.

Mix the flour with semolina, ajwain, 2 tbsp oil and the dal mixture.

Knead into a firm dough using very little water. Let it rest for 15 minutes.

Divide the dough into small balls. Roll each ball into a thick round disc.

Heat oil in a kadhai (deep pan) until medium-hot. Deep fry the puris until puffed and golden.

Drain them on paper towels. Keep warm.

Serve immediately with spicy aloo sabzi (potato curry).
Chef's tips
Do not roll the puris too thin or they will not puff. Keep the oil heat steady for even frying.
