Instructions

Knead wheat flour with water, a pinch of salt and 1 tbsp mustard oil into a soft dough. Let it rest for 20 minutes.

Mix sattu (roasted gram flour), chopped onion, green chilli, garlic, ajwain (carom seeds), lemon juice, 1 tbsp mustard oil, salt and water until crumbly.

Divide dough into balls and flatten them. Stuff generously with the sattu filling, seal the edges, and roll gently into a paratha (flatbread).

Heat a tawa (flat griddle) on medium heat.

Place the rolled paratha on the hot tawa. Cook until small bubbles form on the surface.

Flip the paratha and drizzle mustard oil around the edges. Press it down gently as it cooks.

Cook both sides until golden brown patches appear and the paratha is cooked through.

Serve hot with pickle and yoghurt or plain curd.

Roll gently and evenly so the filling does not tear through. Lemon juice adds flavour and keeps the filling moist.
