Instructions

    Grind soaked rice, urad dal (black lentils) and poha (flattened rice) separately into smooth batters. Mix together with salt and ferment overnight until bubbly.

    Soak dried red chillies. Blend them with garlic, a little coconut and salt into a thick spreadable paste for the red chutney.

    Pop mustard seeds in hot oil. Add sliced onions and turmeric, cook until soft, then stir in mashed potatoes and salt for the filling.

    Heat a tawa (flat griddle). Pour a ladle of batter and spread it into a thin, large circle.

    Drizzle oil around the edges. Cook until the base turns crisp and reddish-brown.

    Place a portion of the potato filling in the centre. Fold the dosa over the filling.
