Instructions

Put on gloves. Wash the wild nettle leaves thoroughly to remove any grit.

Boil the nettles for 2 minutes to stop their sting. Drain the water and chop them finely.

Heat the mustard oil in a pot. Cook the onion and garlic until soft.

Add the rinsed barley. Stir for 1 minute.

Pour in the water or stock and bring it to a boil.

Lower the heat. Simmer gently for 20 minutes until the barley is tender.

Stir in the chopped blanched nettles. Cook for a further 5 minutes.

Add salt and black pepper to taste. Serve hot.
Chef's tips
Always blanch nettles in boiling water before further use. This removes their sting completely and makes them safe to eat.

Refrigerate for up to 2 days in an airtight container.
