Instructions

Heat mustard oil in a heavy pot. Fry the onion until soft.

Add crushed ginger and garlic. Cook until fragrant.

Add pork pieces. Fry them on medium-high heat for 5 minutes until browned.

Stir in slit green chillies. Cook for 2 minutes.

Pour in water. Bring it to a boil.

Lower the heat. Cover and simmer for 30 minutes until the pork is nearly tender.

Add sliced fermented bamboo shoot. Stir well.

Simmer for another 15 minutes. Cook until the pork is fully tender and the broth smells fragrant.
