Instructions

    Mix the mandua flour with wheat flour, salt and carom seeds in a large bowl.

    Gradually add warm water. Knead into a soft, slightly sticky dough.

    Cover the dough with a damp cloth. Rest it for 10 minutes.

    Divide the dough into equal portions. Shape each piece into a ball.

    Flatten each ball between your palms or roll gently on a lightly floured board. Be careful as the dough tears easily.

    Heat a griddle over medium heat. Place a rolled roti (flatbread) on it.

    Cook for 1 minute until small bubbles appear. Flip the roti over.

    Cook the other side. Press gently with a cloth to help it puff slightly.

    Apply a little ghee (clarified butter) on both sides. Cook until brown spots appear.

    Serve hot with more ghee or a side of gutke or chainsoo.

Chef's tips

Mandua dough tears easily, so pat it out by hand instead of rolling hard with a pin. Serve immediately because mandua rotis harden quickly once cool.

  • wheat flour binder โ†’ omit for a fully gluten-free roti, using extra warm water to bind

Storage

Best eaten fresh; store cooled rotis wrapped in cloth for up to a day.

Reheat briefly on a hot griddle or wrap in foil and warm.
