Clean the wild mushrooms thoroughly to remove any dirt or forest debris. Slice them into even pieces.

Heat mustard oil in a kadai (deep pan). Fry the garlic, ginger and green chilli until fragrant.

Add the onion. Cook until it turns soft and lightly golden.

Stir in the tomato and turmeric. Cook until the tomato breaks down and softens.

Add the sliced mushrooms. Stir well until coated in the masala (spice mixture).

Cover the pan and cook on low heat for 12โ15 minutes so the mushrooms release their moisture.

Uncover the pan and simmer gently. Cook until the liquid reduces into a light gravy.

Season with salt to taste. Garnish with coriander or wild herbs and serve hot.
