Instructions

    Heat the mustard oil in a heavy pot until it is hot and shimmering.

    Add the chopped leafy greens in batches. Toss them well as they shrink down.

    Sprinkle in the turmeric powder if using. Mix everything together thoroughly.

    Cover the pot with a lid. Cook on low heat for 10 minutes, stirring now and then.
